Is anyone aware of a recipe for vegan choux pastry?
Is it possible?

Watching Masterchef Australia, I saw them make a beast of a Croquembouche, and I really want to try to veganise this monster. I'm pretty sure I could make a decent vegan custard, the caramel is already vegan, but my god the choux seems difficult to veganise ( Read more... )

I remember making a lot of "soesjes", profiteroles when I was a kid, and an important step was to incorporate a few eggs one by one. Has anyone here ever succesfully made these without eggs? I never even considered it, because the eggs seemed so important, but now I want them!
